- 100 g sugar
- 200 g walnuts
- 2 eggs
- 80 g sugar
- 300 g whipped cream

Caramelize the sugar in a pan, roughly chop the nuts, add them, and coat with the caramel. Pour the mixture onto a greased baking sheet and let it cool. Whip the cream until stiff peaks form and refrigerate. Chop the nut brittle. Beat the egg in a double boiler until thick and foamy, gradually adding the sugar. Then whisk it in a double boiler until cold. Fold the brittle and the stiff peaks form into the egg mixture. Pour into single-serve molds and freeze.
