Ingredients for 4 servings:
- 330 ml whipped cream
- 250 g mascarpone
- 250 g quark (cottage cheese)
- 90 g brown sugar
- 1 tsp vanilla sugar
- 400 g speculatius biscuits
- 500 g raspberries, frozen, thawed and drained
- Cocoa powder
Instructions
Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes
Whip the cream until stiff. Stir in the mascarpone, curd cheese, sugar, and vanilla sugar. Spread the cream on the base of a rectangular baking dish. Place a layer of speculatius biscuits on top, pressing them into the cream. Spread a layer of berries on top, then cream, speculatius biscuits (again pressing them into the cream). The last layer should be cream. Sprinkle this with cocoa powder. Refrigerate for a few hours. The speculatius biscuits will become soft.
