Asparagus salad

Ingredients for 4 servings:

  • 500 g asparagus
  • 3 tomatoes
  • 4 eggs, hard-boiled
  • 2 tbsp mayonnaise
  • 1 spring onion(s)
  • salt and pepper
  • Vinegar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the asparagus into pieces, cook until al dente, drain, and let cool in a bowl. Dice the tomatoes and eggs, slice the spring onion, and add everything to the asparagus. Mix in the mayonnaise and season with salt, pepper, and vinegar. Serve with a baguette.
