Pumpkin and vegetable sauce with noodles

Ingredients for 4 servings:

  • 1 small Hokkaido pumpkin(s)
  • 1 large carrot(s)
  • ½ celeriac
  • 2 onions
  • 1 can of tomatoes
  • 1 dash of sweet chili sauce
  • 1 shot of mulled wine
  • ¼ liter of water
  • 1 pinch(s) of salt and pepper
  • Spice(s), e.g. Italian herbs, garlic, tomato seasoning salt
  • 500 g pasta

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

vegetarian, simple

Grate the vegetables and sauté them lightly in a pan. Add the canned tomatoes and heat through. Pour in the sweet chili sauce, mulled wine, and water. Season with spices and reduce slightly. Simmer for about 15 minutes. Thicken with starch if necessary. Cook the pasta according to the package instructions until al dente. Serve the pasta with the sauce on plates.
