Ingredients for 4 servings:

  • 2 cucumbers (one for pulling and one for blending)
  • 1 carrot(s)
  • 2 radishes
  • Vegetables as cargo for the train (peppers, radishes, etc.)

Cut a cucumber in half lengthwise. Make sure that the tip of the cucumber is still visible (this will be the locomotive), so start halving about 2-3 cm from the tip. Now cut one half of the cucumber into 3 equal pieces (locomotive and 2 trailers) and connect each piece with a toothpick. To conceal the toothpicks between the trailers, you can stick radish slices on top, but it will look good without them too. Now take 1/4 of a cucumber (from the unused cucumber) and attach it to the locomotive with a toothpick as the driver’s cab, cutting windows into each side. You can then also use part of the remaining cucumber that was halved at the beginning as a roof. Peel a carrot and cut it into pieces about 1-2 cm wide. Attach 4 “wheels” to each of the locomotive and the trailers with a toothpick. Since it’s going to be a steam locomotive, you’ll need radishes for chimneys. Oblong radishes are better for this than perfectly round ones. Now secure them in front of the driver’s cab with toothpicks. Finally, hollow out the two trailers a bit and add vegetables to your liking as cargo.
