Instructions
Working time approx. 30 minutes; Rest time approx. 2 hours 12 minutes; Total time approx. 2 hours 42 minutes
Soak the gelatin in cold water for 10 minutes. Mix the mulled wine, cherry juice, cinnamon, vanilla sugar, and sugar in a large bowl. Dissolve the gelatin over low heat. Stir some of the mulled wine and juice mixture into the gelatin, then return everything to the remaining mulled wine and juice mixture and mix well. Stir in the yogurt and let stand (if necessary, in the refrigerator) until the mixture begins to set. In the meantime, whip 325g of the cream until stiff peaks form and fold it into the cream as soon as it begins to set. Crumble the speculatius biscuits. In a bowl, alternate layers of mulled wine cream, speculatius biscuits, and cherries. Whip the remaining cream until stiff peaks form and spread it on top of the cream. Decorate with cherries and, if desired, chocolate shavings. Then return the cream to the refrigerator for another 2 hours. This dessert also looks great layered in serving glasses.
