Magic semolina

Ingredients for 2 servings:

  • ½ liter of milk (I use the 1.5%, but 0.1% works just as well)
  • 4 tbsp semolina
  • Sweetener as desired
  • ½ tsp baking powder

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Bring the milk to a boil, stir in the semolina, and let it swell. Sweeten to taste with sweetener. Remove the pot from the heat and place it in a cold water bath (I use the sink). Add the baking powder and mix vigorously with a hand mixer for about 5 minutes. This makes the semolina nice and light and fluffy. Variations: Add 1 tablespoon of cocoa powder to the mixture to make chocolate semolina. Add 1-2 tablespoons of ground nuts for nut semolina. Serve with apple or other fruit, or mix in grated ones.
