Honey muffins with corn flour

Ingredients for 12 servings:

  • 155 g corn flour
  • 150 g wheat flour
  • 1 tbsp baking powder
  • 100 g sugar
  • 1 tsp salt
  • 235 ml milk
  • 2 large eggs
  • 115 g butter, melted
  • 75 g honey

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 200°C and grease a muffin tin or line it with paper baking cups. Combine the cornmeal, wheat flour, baking powder, sugar, and salt. Melt the butter in the microwave. Combine the milk with the eggs, butter, and honey. Add the flour mixture and stir until a smooth batter forms. Pour the batter into the prepared muffin tin and bake for about 15 minutes, until golden brown. Cool on a wire rack. These muffins can also be eaten with butter, jam, or honey for breakfast.
