Ingredients for 12 servings:

  • 1 cube of fresh yeast (42g)
  • 300 ml lukewarm water (1)
  • 1 tsp sugar
  • 500 g flour (wheat flour), type 550
  • 1 tsp salt
  • 1 liter of water, (2)
  • 10 g baking soda
  • 1 tbsp salt, coarse
  • 20 g margarine

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes

Dissolve the yeast in the water (1). Sift the flour into a bowl, add the ingredients, and knead with the salt and margarine. Form into a log on a floured baking surface and divide into 12 pieces. Roll out each piece individually until each is about 40 cm long. Then shape into pretzels, cover, and let rise for 10 minutes. Meanwhile, bring water (2) with baking soda to a boil and place the risen pretzels in the boiling water for about 30 seconds. Then remove with a slotted spoon and place on a baking tray lined with baking paper. Sprinkle with coarse salt and chill for 30 minutes. Bake in a preheated oven at 225 degrees Celsius or gas mark 3 for about 20 minutes. They taste best when eaten while still warm.
