Lamb's lettuce with caramelized walnuts

Ingredients for 4 servings:

  • 30 raspberries, frozen
  • 3 tbsp vinegar (raspberry vinegar)
  • 6 tbsp oil (walnut oil)
  • Salt
  • black pepper
  • Sugar
  • 3 tbsp butter
  • 2 tbsp dry white wine
  • 1 ½ tbsp sugar
  • 1 cup walnuts, coarsely chopped
  • Parmesan, finely sliced
  • 250 g lamb’s lettuce

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Spin dry the thoroughly washed lamb’s lettuce, chop finely if desired, and then arrange on a salad platter. Melt the butter, sugar, and wine in a pan and caramelize the coarsely chopped walnuts. Remove the walnuts and let them cool. Purée the raspberries with the vinegar, oil, and spices using a hand blender. Drizzle the dressing over the salad and sprinkle with the nuts. Finish with cheese shavings.
