Vegetarian Bolognese sauce

Ingredients for 4 servings:

  • 1 garlic clove(s), chopped
  • e.g. olive oil
  • 1 tbsp sesame seeds
  • 1 tbsp tomato paste
  • 70 g oat flakes
  • 2 cans of tomatoes, chopped, approx. 400 g each
  • n. B. Tomato(s), diced, if desired
  • 1 carrot(s), grated
  • 2 tsp vegetable broth, instant
  • Salt
  • oregano
  • possibly chili powder
  • some water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

for all those who are not happy with soy mince

This recipe was born after many attempts to create a vegetarian substitute for good old Bolognese sauce, which is somehow superior to any Napoli sauce. Sauté the chopped garlic clove in olive oil (only briefly, as it quickly becomes bitter), add the sesame seeds, then stir in the tomato paste and dissolve it. Briefly (!) fry the oats in this mixture, add the grated carrot, and then immediately stir in the tomatoes. Top up with a little water and stir in the vegetable stock powder. Simmer until the oats have absorbed the water and a nice thick consistency is reached. You may need to add a little more water (the sauce shouldn’t stick to the bottom). Season with salt and oregano. If you like it spicy, you can also add some chili powder. Oats also make a good vegetarian chili con carne.
