Cold stirred mulberry jam

Ingredients for 1 servings:

  • 200 g mulberries, freshly picked black
  • 3 tsp, str. Biobin, (locust bean gum)
  • 10 drops of sweetener or sugar
  • 5 tbsp lemon juice

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Just sort the mulberries, don’t wash them. Purée them finely in a tall container with a hand blender. Add the sweetener and lemon juice and continue blending. Now add the Biobin and continue blending until it thickens. Done. Transfer to a sealed jar and store in the refrigerator for up to a week. Then it should be gone! You can also use other fruits, but always make small batches, as it doesn’t keep for long.
