Ingredients for 2 servings:
- 1 chicken breast
- 1 onion(s)
- ½ large zucchini , or a small
- 150 ml vegetable stock
- ½ can coconut milk
- 2 tbsp peanut butter
- 1 tbsp tomato paste
- salt and pepper
- olive oil
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Finely chop the onion, chicken breast, and zucchini. Heat the olive oil and sauté everything for a few minutes. Deglaze with vegetable stock and stir in the tomato paste, peanut butter, and coconut milk. Season with salt and pepper and simmer on low heat for about 10 minutes. Serve hot. Basmati rice goes well with this dish.
