Heat the butter. Peel the onion, slice into rings, and sauté in the hot butter until translucent. Remove the skin from the sausage, cut into 2 cm thick slices, and then quarter them. Add the sausage to the onion and fry vigorously. Add the peeled tomatoes and their liquid to the sausage and simmer for about 5 minutes, stirring occasionally. Season the onion and sausage mixture with salt, pepper, mustard, and oregano, and finish with sour cream. Wash the chives, shake dry, chop, and stir in. This sauce goes especially well with spaetzle.
