Fried Noodles with Chicken

The perfect fried noodles with chicken recipe with a picture and simple step-by-step instructions.

Marinade for the meat

  • 250 g Quickcook noodles
  • 100 g Mung bean sprouts fresh
  • 90 g Poultry stock
  • 2 Eggs
  • 1 medium-sized Carrot
  • 1 medium-sized Onion
  • 0,33 Leek stick
  • 0,33 tsp Clove of garlic
  • 6 tbsp Soy sauce light
  • 1 tbsp Soy sauce dark
  • 1 tbsp Pepper from the grinder
  • Rapeseed oil
  • 2 tbsp Soy sauce light
  • 0,2 g Baking soda
  1. First cut the meat into strips and mix well with the marinade. Let it soak in the refrigerator for at least 4 hours, but better for 24 hours. Soak the pasta in warm tap water for 15 minutes, stir briefly in between or break the pasta apart. Then pour cold water over it and let it drain.
  2. Cut the carrot into sticks, cut the onion into eighths, cut the leek into lozenges. Peel and finely chop the clove of garlic.
  3. Heat the rapeseed oil in the wok, fry the meat in portions and set aside. Put the eggs in the wok, lightly combine the egg yolks with the egg white. Remove the fried egg from the wok with the meat. Fry the vegetables, add the noodles (add a good dash of rapeseed oil) with garlic and stir well. Meat and egg with mung beans in the wok, deglaze with soy sauce / poultry stock, toss well again, a little pepper and serve. Good luck and good appetite
  4. Note 4: I only use soy sauces with no added glutamate.
