Tortellini casserole a la fire poppy seeds

Ingredients for 4 servings:

  • 500 g tortellini from the refrigerated section
  • 500 g minced meat, half and half
  • 2 onions
  • 3 garlic cloves
  • 1 stalk(s) leek
  • 1 bell pepper(s), red
  • 150 g zucchini
  • 2 packs of tomatoes, pureed
  • 375 g mozzarella
  • rosemary
  • Thyme
  • Salt and pepper, freshly ground
  • Herbs, Italian
  • olive oil

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Cook the tortellini according to the package instructions and then drain well. In the meantime, peel the onions and dice them finely. Peel the garlic and set them aside. Wash the bell pepper and dice them finely. Wash the zucchini and leek and slice them thinly, then set them aside for now. Heat the oil in a pan and fry the onions until translucent. Then add the minced meat and fry until lightly browned, breaking up individual pieces. Meanwhile, season everything with salt and pepper. Then add the bell pepper, zucchini and leek and sauté everything for about 10 minutes, stirring occasionally. In the meantime, add the garlic through a garlic press. Then add the pureed tomatoes and the herbs. Simmer for about 5 minutes and season to taste with salt, pepper and the herbs. Then, place the cooked tortellini and the sauce with the vegetables in a baking dish and mix everything together well. Thinly slice the mozzarella and arrange it over the tortellini sauce mixture. Then bake everything together in the oven at 200 degrees Celsius for 20 minutes.
