French-style potato soup

Ingredients for 3 servings:

  • 500 g potatoes
  • 1 onion(s)
  • 250 ml milk, or half cream, half water
  • 1 liter vegetable broth
  • 1 tbsp flour
  • 2 tbsp olive oil
  • Parsley
  • salt and pepper
  • 125g bacon

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Light and fast

Peel and wash the potatoes, and cut into small cubes. Peeled, they should weigh 500g. Dice the onion and fry in olive oil. Dust with flour and continue to sauté briefly. Deglaze with the milk and pour in the hot vegetable stock, and simmer for 10 minutes. Then add the chopped potatoes and cook until tender. Season with salt and pepper. Finally, puree and season to taste. Fry the bacon cubes in a pan with a little fat. Wash, dry, and finely chop the parsley. Add the bacon cubes and parsley to the soup and serve.
