Ingredients for 6 servings:

  • 1 kg potatoes
  • 2 onions
  • 2 eggs
  • 4 tbsp flour
  • salt and pepper
  • 4 tbsp tomato ketchup
  • 200 g cooked ham, diced
  • 1 small can of mushrooms, sliced
  • 1 bell pepper(s), red, diced
  • 200 g Gouda or Edam, grated

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 40 minutes

Peel the potatoes, grate them in cold water, rinse thoroughly, and then place the batter in a sieve, collect the water, and let it rest (approx. 10 minutes). A white field (potato starch) will then form at the bottom. Pour off all the water, making sure the white part stays at the bottom. Then add the white potato starch to the potato pancake batter. Grate the onions, stir them into the potato mixture, and the remaining ingredients. Mix everything thoroughly. Spread on a baking sheet lined with baking paper. Bake in a preheated oven at 180°C (top/bottom heat) (160°C fan oven) for approx. 20 minutes. Remove from the oven, spread with ketchup, and arrange the toppings on top. Sprinkle with cheese and bake for another 20 minutes until golden brown, until the cheese has melted. Tip: You can vary the ingredients according to your taste, e.g., tuna, anchovies, minced meat, pineapple, and much more.
