Peanut butter chicken with mixed salad

Ingredients for 4 servings:

  • ½ head of iceberg lettuce
  • 2 bell peppers
  • ½ cucumber(s)
  • 3 large tomatoes
  • 1 can of corn
  • Vinegar
  • 4 chicken breast fillets
  • 2 tbsp peanut butter with pieces, lightly salted
  • salt and pepper
  • oil
  • some water

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Wash the lettuce and vegetables and cut into bite-sized pieces. Drain the can of corn and add it to the salad. Mix a dressing of your choice from vinegar, oil, and water and arrange it on 4 plates with the salad. Wash the chicken and pat dry, then cut into 2 x 2 cm cubes, season with salt and pepper. Heat a little oil in a pan and sear the meat until browned on all sides. When it’s cooked, add the peanut butter and stir over low heat until melted. Stir until all the meat is well coated. Spoon the meat over the salad and serve.
