Ingredients for 2 servings:
- 250 g chicory
- 10 cherry tomatoes or date tomatoes
- 1 ball of mozzarella
- 2 tbsp Balsamic vinegar (Balsamic vinegar di Modena)
- 1 tbsp walnut oil
- 1 tsp honey
- e.g. salt and pepper
- some water to lengthen
- e.g. fresh basil
Instructions
Working time approx. 12 minutes; Total time approx. 12 minutes
Trim and wash the chicory. Wash the tomatoes and quarter or halve them as desired. Remove the mozzarella from the brine, drain, and finely chop. For the dressing, combine all ingredients and season to taste. Chop the basil, if desired, and mix in. Arrange the chicory, tomatoes, and mozzarella on plates or in small bowls and pour the dressing over them. If desired, garnish with basil leaves.
