Fried potatoes with bacon and fried egg

Ingredients for 1 servings:

  • 250 g potatoes, peeled and weighed
  • 50 g lean ham cubes
  • 1 small onion(s)
  • 1 egg(s)
  • 5 g clarified butter
  • 5 g vegetable oil
  • salt and pepper
  • Paprika powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Wash, peel, and halve the potatoes. Then boil them in salted water until tender. Once they’re done, drain the water and rinse the potatoes with cold water. In the meantime, peel the onion and slice it into thin rings. Cut the potatoes into 3-5 mm thick slices. Heat clarified butter in a pan. Once hot, add the potato slices, ensuring all or almost all of them are touching the bottom of the pan. Fry over medium heat for about 5 minutes on one side until golden brown, then turn. Now add the ham cubes and onion rings. Season with salt, pepper, and paprika. Meanwhile, heat a little oil in a small separate pan, add the egg, and fry until fried. Serve the fried potatoes with the fried egg. Tip: If you’re very hungry, you can of course use a second egg. Herby curd cheese also goes well with the dish. Using cooked potatoes from the day before saves time and energy. Per serving: approximately 400 kcal
