Sour bean soup

Ingredients for 4 servings:

  • 250 g beans, green
  • 50 g bacon, diced
  • 2 large onions
  • 1 liter vegetable broth, also instant
  • 4 tbsp vinegar (vinegar essence)
  • 3 tsp, levelled sugar, or 3 leaves sweetener
  • 4 large potatoes, waxy

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Cut the beans into approximately 1.5 cm pieces. Finely chop the onions. Dice the potatoes. Sauté the onions until translucent. Add the broth, bring to a boil, and add the green beans and diced potatoes. Add the bacon. Stir in the vinegar essence and sugar and cook until the beans and potatoes are nice and firm to the bite, about 10-20 minutes, depending on the thickness of the beans.
