Asian vegetable stir-fry with turkey

Ingredients for 4 servings:

  • 500 g turkey breast
  • 1 small onion(s), chopped
  • 2 stalk(s) leeks, sliced/ringed
  • 1 m.-large eggplant(s), diced
  • 250 g mushrooms, fresh, quartered
  • possibly bell pepper(s)
  • 3 tsp curry paste, red
  • 1 tbsp processed cheese, light
  • 1 tbsp oil (rapeseed oil)
  • salt and pepper
  • Paprika powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

quick, easy and delicious!

Cut the turkey breast into cubes, season with salt and pepper, fry in rapeseed oil, and set aside. Sauté the chopped onion and eggplant cubes in the remaining oil. Add the quartered mushrooms, leek, and diced bell peppers, if desired, and fry for about 5 minutes. Return the turkey pieces, mix in the red curry paste, and finally stir in the melted cheese. Stir-fried noodles make a great side dish. If you’re in a hurry, simply add them at the end (with a little water, if desired) and let them simmer.
