Asian vegetable stir-fry with chicken and mango

Ingredients for 4 servings:

  • 2 bell peppers, cut into medium pieces
  • 1 small broccoli, cut into small florets
  • 1 mango(s), peeled and diced
  • 1 large carrot(s), cut into fine strips
  • 2 tbsp mung bean sprouts
  • possibly vegetables and/or mushrooms of your choice
  • 400 g chicken breast, cut into cubes
  • 2 tbsp sambal oelek
  • 2 tbsp oil, for frying
  • 1 dash of soy sauce
  • Salt

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

goes perfectly with rice and Asian noodles

Add oil and sambal oelek to a large, deep frying pan or wok and fry the meat. Then add the carrots and broccoli and fry briefly. Then add the bell peppers and mango and fry briefly again. Finally, add the sprouts, stir in soy sauce and salt, and fry briefly. Serve with Asian noodles or rice.
