Ingredients for 4 servings:
- 400 g turkey medallions
- 4 tbsp oil
- 750 g zucchini
- 2 bell peppers
- 3 tbsp tomato paste
- 3 onions
- 400 g cream
- 2 garlic cloves
- 150 g cheese, grated
- 250 ml water
- salt and pepper
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour
Wash and chop the zucchini and peppers. Peel and chop the onion and garlic. Cut the meat into 6 pieces and pat dry. Brown on all sides in a pan, season, and remove from the pan. Fry the vegetables in the pan for about 8 minutes. Stir the tomato paste, cream, and water into the vegetables and simmer for about 5 minutes. Season to taste. Place the meat in a baking dish and pour over the vegetables and sauce. Sprinkle with cheese. Bake in an oven preheated to 200°C (top/bottom heat) for about 15 minutes on the middle rack.
