Lamb's lettuce with apple balsam, apples and nuts

Ingredients for 4 servings:

  • 2 apples (e.g. Delicius)
  • 1 piece(s) butter (small piece)
  • 2 tbsp sugar
  • 100 g walnuts
  • 1 bowl of lamb’s lettuce
  • 5 tbsp vinegar (apple cider vinegar)
  • 5 tbsp oil (walnut oil)
  • 1 tbsp mustard (honey mustard)
  • Salt
  • Pepper from the mill

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and slice the apples. Melt the sugar and butter in a pan and caramelize the apple slices. Finely chop the walnuts. Trim and wash the lamb’s lettuce, then pat dry with kitchen paper. Then divide it between four plates. Mix the apple cider vinegar with honey mustard and a pinch of salt and freshly ground pepper until smooth. Add the walnut oil and vinegar and whisk. Pour the finished dressing over the lamb’s lettuce garnished with apple slices and sprinkle with the chopped walnuts. A special highlight: Serve with thinly sliced ​​smoked goose breast and fresh whole-grain baguette.
