Balsamic – speck fish

Ingredients for 4 servings:

  • 4 fish fillets (e.g. cod)
  • salt and pepper
  • 50 g bacon, strips
  • 2 garlic cloves
  • butter
  • 1 tbsp balsamic vinegar
  • 1 tsp sugar
  • 2 tbsp olive oil
  • ½ tsp sambal oelek
  • 2 bunch parsley, chopped
  • lemon juice

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Butter an ovenproof dish and add the salted, peppered, and lemon-drizzled fish. Sprinkle with bacon strips. Add garlic slices and dot with butter. Cover with a mixture of balsamic vinegar, sugar, olive oil, sambal, and chopped parsley. Bake at 200°C (preheated oven) for about 20 minutes.
