Ingredients for 4 servings:
- 750 g strawberries
- 1 tsp lime zest, grated
- 1 tbsp lime juice
- 1 tbsp brown sugar
- 60 g pine nuts
- 1 bunch lemon balm
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Wash and hull the strawberries, and cut them into quarters. Stir together the grated lime zest, lime juice, sugar, and rum until the sugar dissolves. Mix the marinade with the strawberries and let it sit for 15 minutes. Roast the pine nuts in a dry pan. Pluck the lemon balm leaves from the stems and roughly chop them. Stir the pine nuts and lemon balm into the salad before serving.
