Ingredients for 2 servings:
- 150 g tortellini, dried
- salt and pepper
- 5 slices of breakfast bacon
- 3 tbsp apple cider vinegar
- 1 pinch(s) of sugar
- 2 tbsp oil
- 100 g cherry tomatoes
- ½ bunch of spring onions
- 60 g mushrooms
- basil
- 125g mozzarella
- 80 g double cream cheese with herbs of Provence
- 3 tbsp milk
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cook the tortellini. Fry the bacon until crispy. Mix the vinegar with salt, pepper, and sugar. Whisk in the oil. Drain the tortellini and pour the marinade over them while they are still hot. Halve the tomatoes. Slice the spring onions. Slice the mushrooms. Mix everything with the tortellini. Roughly chop the basil. Cut the mozzarella into pieces. Roughly crumble the bacon. Fold the basil, mozzarella, and bacon into the salad. Season to taste. Mix the cream cheese and milk together and drizzle over the salad.
