Ingredients for 4 servings:

  • 1 ½ kg potatoes, floury
  • 2 egg yolks
  • 4 tbsp potato starch
  • Salt

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 40 minutes

Wash the potatoes and cook them with the skin on for 20-30 minutes until soft. Meanwhile, preheat the oven to 200°C. Peel the potatoes, cut them into large pieces, arrange them on a baking sheet and bake in the oven for 20 minutes until the potato pieces start to brown. Then remove the potatoes and press them through a potato ricer. Mix in the egg yolk, potato starch and salt. Form the mixture into dumplings and place them in boiling salted water. Reduce the heat and let the dumplings simmer for 20 minutes. Do not leave the dumplings in the water for too long, or they will fall apart. Tip: The dumplings taste especially delicious if you briefly heat breadcrumbs and butter in a pan so that the butter melts and mixes with the breadcrumbs and then sprinkle the breadcrumbs over the dumplings.
