Mushroom dumplings

Ingredients for 4 servings:

  • 200 g dumpling bread
  • 200 g bread roll(s), grated
  • 50 g wild mushrooms
  • 200 g mushrooms
  • 50 g smoked bacon, finely diced
  • 200 g onion(s), finely chopped
  • 1 garlic clove(s), finely chopped
  • 200 ml milk
  • 3 tbsp parsley, finely chopped
  • 2 eggs
  • 100 g mountain cheese, finely grated
  • 4 tbsp olive oil
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes

Heat the oil in a pan and fry the bacon. Sauté the onions until translucent. Add the diced mushrooms and garlic and sauté for another 15 minutes. In the meantime, combine the dumpling bread, grated rolls, and parsley in a bowl. Now thoroughly stir in the mushroom mixture, eggs, lukewarm milk, and grated cheese. Season to taste and let cool slightly. With wet hands, form dumplings and place them in a pot of boiling water. Bring back to a boil briefly, then reduce the heat to low and let stand for about 15 minutes. The mushroom dumplings are delicious with all hearty meat dishes, but especially with game. They are also delicious on their own, sprinkled with grated cheese and drizzled with browned butter.
