Simple beetroot salad

Ingredients for 3 servings:

  • 500 g beetroot
  • 1 onion(s)
  • 1 tbsp olive oil
  • salt and pepper
  • 1 pinch(s) of sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 20 minutes

Remove the leaves from the beetroot. Don’t cut any off any of the leaves, as this will cause the beetroot to bleed during cooking. Boil the beetroot in plenty of water for about 40 minutes. Then let it cool and peel the skin. Coarsely grate the beetroot and finely grate the onion. Combine all ingredients in a bowl and season with salt and pepper. Note: If you want to make the first steps easier, buy cooked beetroot from the supermarket.
