Ingredients for 4 servings:

  • 500 g flour
  • ½ tsp salt
  • ½ cube of fresh yeast
  • 65 g butter
  • 250 ml milk
  • 1 egg(s), beaten
  • 1 tsp milk, for brushing

Weggli (rolls) for the Swiss National Day

In Switzerland, 1st August Wegge are a pastry traditionally eaten for breakfast on the national holiday, August 1st. They can be eaten plain or spread with butter, and can also be eaten with jam or cheese/sausage. Mix flour and salt in a deep bowl and form a well. Crumble the yeast into a cup and dissolve it in a little lukewarm milk. Pour it into the well, dust with a little flour, and let it rise until the yeast bubbles. Melt the butter in a pan, remove from the heat, and deglaze with the milk. Add it to the flour along with the egg and knead everything into a smooth dough. Knead for 10-15 minutes until the dough is elastic. Form 1 large or 4 small rolls and place them on a baking sheet lined with parchment paper. Let them rise at room temperature for 15 minutes, then refrigerate for 15 minutes. Brush with milk. Cut crosses into the rolls; baking will create a Swiss cross. Bake in a preheated oven at 200°C for 20-30 minutes, depending on the size. Remove and let cool.
