Herb dumplings in clear meat broth

Ingredients for 4 servings:

  • ¼ liter of milk
  • 1 pinch of salt
  • 20 g butter or margarine
  • 100 g semolina (durum wheat)
  • 1 egg yolk
  • 1 tbsp seasonal herbs, chopped
  • 1 liter meat broth, possibly with cooked vegetables
  • nutmeg

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Bring the milk to a boil with salt and butter (or margarine). Remove the pan from the heat and slowly stir in the durum wheat semolina, egg yolk, and herbs (e.g., parsley, chives, dill, chervil, depending on the season). Continue stirring the semolina mixture for another minute. Once cooled, form small dumplings, either with wet hands or using two teaspoons. Season the meat broth with nutmeg and let the dumplings simmer until they float. Do not boil! Serve hot.
