Braised zucchini

Ingredients for 4 servings:

  • 800 g zucchini, diced
  • 2 garlic cloves
  • 1 tsp salt
  • 1 pinch of pepper
  • 100 g bacon, diced
  • 2 tbsp olive oil
  • 125 ml vegetable stock, hot
  • 1 tbsp sage, chopped
  • 6 tbsp cream
  • 1 pinch(s) of paprika powder, hot
  • 2 tbsp chives, cut into rolls

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Peel and finely chop the garlic cloves, and crush them with salt and pepper. Mix the zucchini cubes with the garlic salt in a bowl. Fry the bacon cubes in the oil, then remove them from the fat with a slotted spoon. Brown the zucchini cubes on all sides in the bacon fat. Add the vegetable stock and sage, cover, and simmer over low heat for 15 minutes. Mix the cream with the paprika, stir into the zucchini, and let some of the liquid evaporate in an uncovered pot over low heat. Serve the zucchini sprinkled with the bacon cubes and chives. Tip: If you want to keep it low in calories, you can replace the bacon with diced ham or chicken.
