Baked eggplant feast

Ingredients for 4 servings:

  • 3 medium-sized eggplants
  • 3 tomatoes
  • 150 g ham (salmon ham or other mild raw)
  • 200 g finely seasoned cheese, grated (e.g. Comté)
  • olive oil
  • Salt and pepper, freshly ground
  • Basil or wild garlic

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the eggplants, cut into 2 cm thick slices, sprinkle with salt, and let them dry slightly. Dry with kitchen paper and fry in hot olive oil. Then place on kitchen paper to absorb any excess fat. Slice the tomatoes. Line a baking sheet with baking paper and place the eggplant slices on it. Place a slice of smoked ham and a slice of tomato on each eggplant slice, season with pepper, and sprinkle with grated cheese. Grill for about 5 minutes. To serve, sprinkle with basil or sliced ​​wild garlic. Serve with flatbread or ciabatta.
