Ingredients for 2 servings:
- 300 g flour
- ½ pack of dry yeast
- ½ tsp salt
- 1 tsp sugar
- 1 tbsp oil
- 150 ml water, lukewarm
- 250 g leaf spinach, frozen, chopped
- 2 balls of mozzarella
- 150 g goat cheese in one piece
- 1 handful of walnuts
- Grease for the tray
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 40 minutes

Keep the spinach warm to thaw. For the base, knead the flour, yeast, salt, sugar, oil, and water into a smooth dough, cover, and set aside in a warm place to rise for one hour. Preheat the oven to 200°C fan/convection oven. Spread the dough evenly on a greased baking sheet, gently pressing down with your hands. Squeeze the spinach lightly and, tearing it slightly, spread it on the base. Roughly break up the nuts and scatter them in the gaps. Roughly chop the cheese and mozzarella and spread them out as well. Bake for about 20 minutes until golden brown. Tip: I always make double the batch and swap and rotate the two baking sheets after 10 minutes to ventilate any excess moisture from the oven. We also like diced ham instead of the nuts.
