Ingredients for 1 servings:

  • 150 g raisins
  • Brown rum for pickling
  • 3 orange(s), untreated
  • 1 grapefruit(s), untreated
  • 1 lemon(s), untreated
  • 500 g apples
  • 500 g pear(s)
  • ½ tsp cinnamon
  • Mace, to taste
  • clove(s), ground, to taste
  • Cardamom to taste
  • 1 kg gelling sugar, 2 : 1

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes

Soak the raisins in brown rum overnight. Wash the oranges, grapefruit, and lemon thoroughly, peel finely, and squeeze out the juice. Cut the peel into fine strips or cubes and simmer gently with 0.5 liters of water and a little juice for about 15 minutes with the lid closed. Peel and finely grate the pears and apples, then add them to the peels along with the remaining juice and the spices. Simmer for another 15 minutes. Weigh everything together and cook with half the weight of gelling sugar until jam is obtained, according to the instructions. Finally, stir in the raisins. Ladle hot into rinsed jars.
