Ingredients for 1 servings:
- 150 g chicken fillet(s)
- 2 slices of Parma ham
- 6 sage leaves (fresh is essential)
- Fat, for the shape
- pepper
- 1 egg yolk
- 75 g cheese, Gouda
- 1 tbsp white wine
- 1 tbsp breadcrumbs

Cut the fillet diagonally into 1 cm thick slices. Cut the Parma ham into equal-sized pieces. Finely chop the sage. Grease a small ovenproof dish. Alternate layers of chicken and Parma ham. Sprinkle each with a little sage (about half the amount) and season lightly with pepper. Bake the fillet in a preheated oven at 225°C for 5 minutes. Mix the egg yolk with the Gouda cheese, wine, breadcrumbs, and the remaining sage. After 5 minutes, spread this mixture over the precooked meat and bake everything for another 10 minutes at the same temperature.
