a fruity temptation
Melt the butter in a frying pan. Add the oats, nuts, and sugar. Fry, turning frequently, until golden. Pour onto a baking sheet lined with baking paper and allow to cool. Then roughly crush. Halve the apricots, remove the stones, and blanch briefly in a little boiling water. They shouldn’t become too soft. Place the apricot halves, cut-side up, in 4 gratin dishes. Drizzle with Grand Marnier, if desired. Pour the semi-whipped double cream over the apricots and sprinkle with the nut and oat brittle. Bake in a preheated oven at approx. 210°C until the dessert has taken on a light brown color. Serve warm and enjoy. Frozen apricots can also be used, but don’t blanch them again, otherwise they will become too soft.
