Potato crowns

Ingredients for 4 servings:

  • 400 g potatoes, cooked
  • 10 g butter or margarine
  • 1 egg(s)
  • 1 egg yolk
  • 1 tbsp milk, approx.
  • Paprika powder, sweet, for sprinkling

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Great for using up boiled potatoes.

Briefly warm the potatoes from the previous day in the microwave so they are easier to mash and shape. Let freshly cooked potatoes cool briefly. In a large bowl, mash the potatoes with the butter, milk, and one egg until a smooth consistency is achieved. Spoon the mixture into a piping bag (or a freezer bag with the corner cut off) and spread evenly onto a baking sheet lined with baking paper. Carefully brush a little egg yolk onto each crown and finally sprinkle with a little sweet paprika. Bake the potato crowns in a preheated oven at 200°C for about 20 minutes.
