Nectarine meringue gratin

Ingredients for 4 servings:

  • 4 nectarines or peaches, ripe
  • 25 g brown sugar
  • 2 tbsp sherry
  • 4 egg whites
  • 250 g powdered sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with sherry

Halve and slice nectarines or peaches. Place in a baking dish, sprinkle with brown sugar, and pour over sherry. Beat egg whites with powdered sugar until stiff peaks and spoon over the top. Preheat oven to 180°C (top/bottom heat) and bake the gratin for about 15-20 minutes. Let the gratin cool and serve with vanilla ice cream and/or whipped cream, if desired. Tip: Instead of sherry, you can also use Marsala or lemon juice. The meringue can also be whipped with brown sugar until stiff peaks.
