Ingredients for 3 servings:
- 250 g Leberkäse
- 200 g Emmental cheese
- 125 g gherkins
- 1 bell pepper(s), orange
- 1 onion(s), white
- 1 onion(s), red
- 3 tbsp vinegar or white balsamic vinegar
- 4 tbsp cucumber juice
- 1 tsp mustard, hot
- 2 tbsp rapeseed oil
- 2 pinches of herbal salt
- 1 pinch of herb pepper
- 1 tbsp chives
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Cut the Leberkäse and cheese slices into strips (I had the Leberkäse cut into 5 cm thick slices). Place both in a bowl. Peel the onions, dice the white ones, and slice or grate the red onion. Add the white onion to the bowl. Finely slice the pickles and add them to the bowl. Wash and trim the bell peppers, remove the white membranes, and also slice them into fine strips. Add them to the salad dressing. Put the vinegar, pickle juice, mustard, and oil in a small bowl. Season well with herb salt and pepper, and mix well. Add to the sausage salad and mix well. Let it sit in the refrigerator for a good hour (or longer) before serving, and season again if necessary. Finally, sprinkle with the chives and red onion rings.
