Ingredients for 1 servings:
- 100 g spelt
- 1 tsp spice mix (bread spice)
- 400 g flour
- 1 cube of yeast
- 40 g oil
- 260 g water, lukewarm
- 1 tsp salt
- 1 pinch(s) of sugar
- n. B. grains and seeds

Wholemeal spelt rolls from the Thermomix
Weigh 100g of spelt into the Thermomix and grind for 30 seconds on speed 10. Weigh in the remaining ingredients, except for the various grains, and knead for 1.5 to 2 minutes using the kneading button. Add a little oil to the work surface (no flour!). Remove the mixing bowl and its contents and turn it out onto the work surface. The dough will come out easily after a few seconds. Remove any remaining dough with oiled fingers or an oiled spatula. Reinsert if necessary, press the turbo button, and push the remaining dough together from the edge with the spatula. Form a log, use the spatula to cut out about 16-18 slices, press the slices into the various grains or grain mixture, and place them upside down on a baking sheet lined with nonstick baking paper, leaving some space between them. Let it rise in the oven at the lowest temperature (50°C) for at least 15 minutes. Then bake at 200°C for 25-30 minutes until golden brown. Tastes best fresh from the oven!
