Ingredients for 8 servings:
- 300 g flour
- 25 g yeast
- 1 tsp sugar
- 125 ml milk, lukewarm
- 1 egg(s)
- 60 g butter
- 1 pinch of salt
- 1 onion(s)
- 20 g lard
- 50 g smoked streaky bacon
- Flour, for rolling out
- Butter, for greasing
- 1 egg yolk
- 1 tsp milk
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
For the dough, put the flour in a bowl. Make a well in the center. Crumble in the yeast. Mix with the sugar, a little lukewarm milk, and flour to make a pre-dough. Let it rise in a dry place for 15 minutes. Then add the remaining milk, egg, fat, and salt. Mix everything into a smooth dough. Beat until the dough bubbles and pulls away from the bottom of the bowl. Let it rise for another 25 minutes. In the meantime, peel the onion and heat the lard in a pan. Dice the bacon and peeled onion. Add to the lard and fry for 5 minutes until translucent. Remove the pan from the heat and let the mixture cool. On a floured surface, divide the dough into 8 equal pieces and flatten them. Add a teaspoon of the bacon and onion mixture to each piece. Spoon the dough over the dough and shape into rolls. Place 5 cm apart on a greased baking sheet. Let it rise for another 15 minutes. Whisk together the egg yolk and milk. Brush the rolls with this mixture. Place on the middle rack of the preheated oven and bake at approximately 220°C for about 25 minutes. Remove the bacon rolls and let them cool on a wire rack. Makes 8 rolls.
