- 2 apples, red
- 2 tsp Szechuan pepper
- 2 tsp fig mustard
- 4 tsp maple syrup
- lemon juice

Wash the apples and remove the cores. Cut the apples crosswise into wafer-thin slices, e.g., using a slicer or cucumber slicer. Arrange the apple slices in a circle or rectangular shape on one large or four smaller plates previously rubbed with lemon juice, swirling them in a roof-tile pattern, and drizzle with more lemon juice. Crush the Szechuan peppercorns in a mortar and pestle or place them in a pepper mill. Spread a thin layer of fig mustard over the apples, sprinkle with pepper, and then drizzle with maple syrup.
