Ingredients for 4 servings:

  • 20 elderflower heads, unwashed, stem slightly shortened
  • 2 m.-sized eggs
  • 200 ml milk
  • 3 tbsp rum or 1/2 bottle rum flavoring
  • 5 tbsp flour, heaped tbsp
  • ¼ pack of baking powder
  • 1 pinch of salt
  • e.g. oil for frying

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

It’s best not to collect the flowers directly near a busy road. Check for insects, but do not wash them. Combine the batter ingredients in a mixing bowl and blend with a mixer. Heat 2 cm of oil in a pan. Dip the flowers into the batter and fry in the hot oil. Drain on kitchen paper and sprinkle with sugar. Best enjoyed warm.
