Ingredients for 4 servings:
- 175 g flour
- 40 g sugar
- 3 eggs
- 250 ml milk
- 1 lemon(s), grated peel
- 500 g strawberries
- 4 tbsp orange liqueur
- 4 tbsp pistachios, chopped
- 40 g butter
- 1 egg white
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes
Mix flour, sugar, eggs, milk, and lemon zest into a smooth batter. Let stand for 30 minutes. Wash the strawberries, cut them into small pieces, and drizzle with orange liqueur. Carefully mix in the pistachios and let stand for 30 minutes. Melt butter in a pan and pour in about 1/8 of the batter. Cook on both sides until golden brown. Fold the remaining batter into pancakes in the same way. Spread the strawberry mixture in the center of the pancakes. Brush the edges of the pancakes with egg white. Now shape them into pouches and carefully tie them with kitchen string or something similar. Steam the finished pouches for another 3 minutes, if desired. Serve with cream or vanilla sauce, as desired.
