Ingredients for 4 servings:
- 20 elderflower heads, unwashed, stem slightly shortened
- 2 m.-sized eggs
- 200 ml milk
- 3 tbsp rum or 1/2 bottle rum flavoring
- 5 tbsp flour, heaped tbsp
- ¼ pack of baking powder
- 1 pinch of salt
- e.g. oil for frying

It’s best not to collect the flowers directly near a busy road. Check for insects, but do not wash them. Combine the batter ingredients in a mixing bowl and blend with a mixer. Heat 2 cm of oil in a pan. Dip the flowers into the batter and fry in the hot oil. Drain on kitchen paper and sprinkle with sugar. Best enjoyed warm.
