Ingredients for 5 servings:

  • 10 apples
  • 250 g flour
  • 100 g butter
  • 1 pinch of salt
  • 3 eggs
  • 250 g applesauce
  • ¼ ml elderberry juice
  • 150 g sugar
  • 250 g chocolate ice cream
  • 200 g chestnuts
  • 100 g apricot jam
  • 50 g raisins
  • 4 cl Cointreau
  • 50 g powdered sugar
  • Fat for the mold

Working time approx. 1 hour; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 45 minutes

Christmas dessert with caramelized chestnuts

Apple Pie Pastry: Knead butter, flour, 100g sugar, salt, and 2 eggs into a dough. Line a greased loaf pan with half of the dough and spread with apricot jam. Mix 7 cored, peeled, and diced apples with 2 tablespoons of sugar, 2 tablespoons of raisins, and Cointreau, spread on the pastry, and cover with the remaining pastry. Prick with a fork, brush with egg yolk, and bake in the oven at 170°C for 45 minutes. Core, peel, and slice the remaining 3 apples. Briefly bring to a boil with elderberry juice, let stand for 20 minutes, then drain the stock. Slice the peeled chestnuts and sauté in a little butter, sprinkling 1 teaspoon of sugar over them. Now arrange on a large 28 cm dessert plate: serve 1 piece of lukewarm apple pie garnished with powdered sugar, 2 slices of marinated apple, 1 tbsp apple sauce, a scoop of chocolate ice cream and caramelized chestnuts.
